Basil Pesto
Pesto Sauce is so easy to make and homemade pesto tastes way better than storebought. This Basil Pesto recipe is fantastic with pasta, chicken, or sandwiches.
Ingredients
Servings: 8 people (makes 1 1/2 cups pesto)
2 cups fresh basil leaves, tightly packed
1/2 cup shredded parmesan cheese/or 1/4 cup nutritional yeast
1/2 cup extra virgin olive oil
1/2 cup pine nuts , or I often use is pumpkinseeds or hempseeds
2 garlic cloves, (large)
1/4 cup lemon juice, (juice of 2 small lemons)
1/2 tsp salt, or to taste
Instructions
Wash and dry the basil leaves.
Place basil into a food processor, add cheese, nuts, garlic cloves, lemon juice, olive oil, salt, and pepper. Process until smooth.
Season with more salt to taste if desired.
If you are making a bunch like I do with my basil that I harvest in the fall, I don’t add cheese to it. I either added it after I thaw it or I use nutritional yeast, and sometimes no cheese/NY at all!
