Healing Bone Broth Egg Drop Soup
This is one of my go to breakfasts or snacks in the Winter. It’s nourishing, healing and warming. Being that it is important to get high protein and low carb breakfast to set up your metabolism for the day, this is perfect! I sometimes add extra protein from the night before.
What I love about it, aside from its wholesome, nutrient-dense ingredient list, is the fact that it is customizable. No need to do a special grocery store run for this one. As long as you have broth, some eggs, and some veggies, you can make your own version of this delicious, healing bone broth egg drop soup.
INGREDIENTS
2 cups bone broth - See video in the Recipe Library or you can purchase bone broth or use any broth, just be sure it’s organic.
½ tsp chili paste or hot sauce.
2 large eggs
2 mushrooms cut into big chunks
Left over veggies or chard, dandelion greens, or whatever you have on hand.
Left over chicken, beef, sausage.
1 clove garlic, crushed -optional - great if you are ill or run down.
3 scallions, chopped -optional
Salt and pepper to taste
INSTRUCTIONS
In a medium pan put the broth.
Stir until well combined and heat over a medium heat.
Meanwhile whisk the 2 eggs in a bowl.
Once the broth is steaming, gently stir it while slowly pouring in the whisked eggs.
Add the greens, protein, and crushed garlic to the broth.
Warm for a few minutes.
Add salt and pepper to taste (and hot sauce if you like it spicy).
Serve with the scallions on top.
