Grain-Free Paleo Coconut Cardamom Granola

This is one of my favourite granola recipes as I don’t always feel like an oatmeal based version and this tastes amazing and is so satisfying.

Ingredients:

  • 1/2 cup coconut oil

  • 1/2 cup applesauce unsweetened

  • 2 tbsp maple syrup optional

  • 1/2 tsp ground cardamom

  • 1 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1/2 tsp ground ginger

  • 1 cup slivered almonds

  • 1 cup dried unsweetened coconut

  • 1/2 cup dried unsweetened coconut smiles/large flakes

  • 1/3 cup hemp seeds

  • 1 cup raw cashews rough chopped

  • 1 cup raw pecans rough chopped

  • 1 tsp kosher salt

INSTRUCTIONS

  1. Preheat the oven to 300F.

  2. In a small saucepan over low heat, add coconut oil, applesauce, maple syrup, ground cardamom, cinnamon, nutmeg, and ginger. As the coconut oil melts, gently stir to combine the applesauce and spices with the coconut. Once combined and coconut oil is fully melted, remove from heat.

  3. Prepare a half sheet pan with parchment paper.

  4. In a large bowl, combine slivered almonds, unsweetened coconut, unsweetened large flake coconut, hemp seeds, rough chopped cashews, pecans and kosher salt.

  5. Pour warm coconut oil mixture into the bowl. Stir to fully coat nut mixture with oil.

  6. Spread granola mixture on prepared sheet pan in an even layer.

  7. Bake for 15 minutes. Stir granola and spread back into an even layer. Bake for another 15 minutes. Be sure to watch the last 5 minutes as every oven is different and you don’t want to come this far and burn it.

  8. Let cool on pan and then break up granola with a spoon. Can be stored in a glass container in a cool place for up to 10 days.
